caramel glazed doughnuts (grain-free)
I’ve had a hankering for something sweet lately. When I saw this yummy-looking recipe for caramel glazed doughnuts at Against All Grain, my sweet tooth sighed loudly, and I decided to give these babies a whirl.
Our mini-doughnut maker has been gathering dust ever since Caleb headed to NM to spend the summer with his mom, but I pulled it out and greased it up. Zia and I whipped up some batter, filled the doughnut molds, and cooked them for 5 minutes.
This probably sounds funny, but I found these doughnuts were a good way to sneak some butter into my diet. I really think butter–especially from grass-fed cows–is healthy. (There is some interesting info out there about how it really affects your cholesterol, as well as some other aspects of your general health. Hint: it’s surprisingly good.)
After being vegan for so long, though, I have a hard time with the taste. I usually prefer to cook with coconut oil, which has its own health benefits, but in baked goods such as this recipe, I can totally do butter. I think mixing it with sweetness makes it palatable to me.
The doughnuts are vanilla, glazed with caramel. The glaze is really yummy, and I like the almond butter in it. I only used half the honey, and it still seemed quite sweet.
I’m not really into sliced almonds on doughnuts, so I skipped that part of the recipe. I might like them rolled in shredded coconut next time, though.
Also, I sweetened the doughnuts themselves with maple syrup so Cash could have a plain one sans honey. He really liked it.
I’m not sure if I should admit this, but I ate three and a half of these, drowned in leftover coconut milk. Shall I say my sweet tooth was thoroughly satisfied.

Haha…we have opposite taste buds…his are on the very sweet end, mine go for hardly any sweetener. Opposites, attract, right? So he’s usually a little wary of my “sweets”. But these are sweet, really!
Geez do I look like I need to be on a diet? LOL
Mmmmmm…and in true southern honesty….Butter is divine.
