Here are a few pics of our meanderings from the past week or so. 🙂

P1290214cpy

It’s been cool-ish up where we live, but so much warmer just down the mountain in Boulder.

We spent an afternoon at the park and creek.

More creek pics.  Caleb skipped rocks, Zia laughed so hard she wet, and Cash was oozing with mud from the armpits down.

Back up in the mountains, our aspens are already turning at the tops. It feels early for summer to be winding down, but hopefully we’ll have a nice warm stretch before that s-n-o-w comes.  (I have to spell it–can’t quite bring myself to let that word roll off my tongue yet.)

Pleeeeeeeease don’t go, summahtime…

Happy birthday, Mimi, from all of us! We miss you and hope you’re having a great day!

paleo blueberry chia cake

P1290212cpy

It’s not very often that I bake my cake and eat it too.  I’ve always been sensitive to sugar, and I would far rather forgo sweets than walk around dizzy and lightheaded all day.  Over the past few months, though, I’ve experimented with compiling a few different muffin and pancake recipes to come up with this cake–and in terms of ingredients, taste, and the steady level of energy I get from eating it, I think it’s just about right.

P1290129cpy

This also makes great muffins, but I’m super efficient (read: lazy) so I usually just pour it into a parchment-lined cake pan, which makes cleaning up–dare I say it?–a piece of cake.

P1290122cpy

In the past couple of years–since going from vegetarian to adapting more of a Paleo lifestyle–I’ve learned how not only sugar, but also grains and carbs in general, can create obstructions to living a healthy life.

From insulin resistance and diabetes to age-related brain maladies such as dementia and Alzheimer’s, studies are showing that our society’s popular high-carb, low-fat (including whole grains) way of eating might be making us sicker and weaker. On the other hand, a diet low in carbs and high in good fats and animal proteins can help keep you strong, sharp, and healthy.

I’m certainly not perfect–my kids eat whole grain sandwiches and sweets, but I’m trying to work other things into their diets–like this cake–in hopes of slowly changing the foods they like.

P1290204cpy

This recipe is a Paleo-ish type of thing, since it contains no grains and less carbs than most cakes.  It also boasts a host of protein from eggs (did you know scientists are finding that eggs are a “superfood”? and, BTW, cholesterol is good for your heart and your brain).  The cake also contains chia seeds and blueberries–superfoods in their own right–and a nice helping of coconut milk.

P1290199cpy

Eating it feels like eating a complete meal, and it’s great to take along on a trip or just for a snack on the go.  I often have it for breakfast, lunch, or dinner (I just try not to eat it for every meal of every day 😉 ) and the kids like it, too. And did I mention it gives you energy?

P1290127cpy

And with that rather gushy introduction, I bring you…

Paleo Blueberry Chia Cake!

Preheat oven to 375 F.

Grease a 13″ x 9″ x 2″ pan with coconut oil, or line with parchment paper. If making muffins, use parchment liners–this makes about 24 muffins. (You can also halve the recipe to yield 12 muffins or fill a smaller cake pan.)

Dry ingredients:

1 cup coconut flour

1/2 cup protein powder (any kind; I’ve been using this)

1/2 cup sweetener (I use xylitol or erithritol–if using stevia, try 1/2 tsp liquid or 1 tablespoon powder)

2 tsp baking powder

2 tsp cinnamon

1 tsp sea salt

Wet ingredients:

1 dozen eggs

1 can full fat coconut milk

1 tsp vanilla extract

Juice of 1 lemon

Add at the end:

1/3 cup chia seeds

2 cups blueberries ( use frozen)

Combine dry ingredients in a large bowl. Mix or whisk together wet ingredients (I use a blender) and add to dry ingredients, stirring well. Whisk in chia seeds, then carefully fold in blueberries. Pour into prepared pan and bake 30-40 minutes, or until toothpick comes clean. Try not to overcook–it’s better a little moist.

I like to eat this cake after it cools, topped with yogurt (1 cup plain yogurt, 7-10 drops stevia, a few drops lemon flavor).  Let me know what you think if you try it!

on my birthday

In the kitchen I found a Papyrus birthday card from David, signed by all the kids. The fish and coral are embroidered on muslin and studded with seed beads. He always finds amazing cards for me!

P1280781cpy

We spent the early part of the day at our sweet, wild church on Lookout Mountain.  Paul Wilbur was a special guest.  It’s always fun when Paul comes to visit.  He’s a true lover of God, an awesome musician, and a Harley dude.

P1280856cpy

We ate sandwiches in the car and took the kids horseback riding–actually for Zia’s birthday, a little late.

P1280892cpy

This is our third summer visiting Pine Cliff Stables at White Ranch.  They take you up a thousand feet or so, and you can see Golden and much of Jefferson County laid out before you.  After the ride, you wobble around on bowlegs for awhile.

Cash and I stayed behind to wait–he has to be six to go on a trail ride–but he got a leg up when they returned.

P1280957cpy

“This horse is huge! I need a pony!”

Heading home through the canyon.

Studying my newly forty-year old face.

P1280963cpy

P1290017cpy

And making silly faces at a stop for gas.  Obviously, I let David do all the work.

P1290020cpy

BUT…

P1290035cpy

I didn’t know someone had his head in the window, watching me wink, grin, and snap away.

“#562,” he muttered.

P1290007cpy

I remember making silly faces in the mirror when I was about three and then turned to find my papa watching me.  I was incredibly embarrassed and quickly said, “I wasn’t making any faces!”  He gave me a look kind of like the one above, with just a little less of the chiseled-rock aspect.  Actually, I think I remember a smile, which made me even more embarrassed.

P1290038cpy

The view behind me. Riding hosses makes you sleepy.

P1290045cpy

I love my life–this man, these kids, this rugged land. I know turning forty isn’t so fun for many women, and I feel so blessed with all the goodness I’ve been given.  Happy trails, y’all!

That’s me, 40 years old today. Just popping in to say hi and wish myself a very warm happy birthday. I’ll be back later!
