red velvet cupcake day
As you can see, the boy comes home today. We missed him, but we also had a blast making red velvet cupcakes for the first time ever. Caleb has informed us many, many times of the delectable wonders of red velvet cake, so here ya go, boy. Hope the homemade version suits you.
I wasn’t about to dump in the required bottle of red food coloring, so I called on some friendly beets to give their color. The beets worked great, and we were able to forgo the brain altering qualities of red #40.
I am super happy with the way they came out. I love the white cream cheese frosting against the red cake.
Zia cut out the letters and stuck them on top. We’re ready for our big boy to come home!
Besides making red cupcakes, Zia and I have been reading YouVersion’s Children’s Easter Story. We don’t do much in the way of bunnies and eggs, but we have been talking a lot about the days leading up to Jesus’ resurrection, and the understandable confusion of his disciples, and how we might have felt if we were there. Amazing stuff.
Our little homemade celebrations have eased the pang of saying goodbye to Dadda. He headed off this morning on an adventure in the deep south, where he will be setting up equipment for live web streaming the Master’s Golf Tournament to the world.
One boy out, another in. Life is never dull around here!

So you couldn’t taste the beet? I probably would have tried elderberry juice concentrate but it wouldn’t be as BRIGHT as these turned out!!! VERY PRETTY!!! Who needs red 40!?!
