noodles for cold weather

The kids have been a little under the weather, so I decided today would be a good day to make a nice hot soup for us all. Or at least, for those of us who love soup–namely, Zia and me.

I started by popping a veggie broth cube into some hot water in a little pan (as my ideas grew, so did my pan).

I use Rapunzel Vegan Vegetable No Salt Bouillon cubes. I used to use the Sea Salt ones, but they are super salty, so now I get the No Salt kind and add my own salt. It works out much better.

Next, I sliced up a few carrots and a bit of onion (green onions would have been even better) and added some roughly chopped pieces of ginger and garlic. While all that simmered, I set some water to boil, and cooked the best part…the NOODLES.

I love noodles. Unfortunately, most noodles are not very healthy, so I don’t have noodles very often these days. But I found these at Whole Foods the other day, and for being made of only whole grain brown rice, they are awesome. Spoken by a true noodle lover.

I cooked them for about 5 minutes, then drained them and popped them into the broth. That’s when this soup really started to get fun. 🙂

I crackled up a few sheets of seaweed and threw them in. A spoonful of miso from a tub I found in the fridge (miso lasts a long time, right?) A splash of Bragg’s amino acids, a scoop of nutritional yeast, a dash of dulse. Freshly ground black pepper, a little sea salt. A heaping teaspoon of curry powder added another dimension of warmth and a golden color. I have to say, it just kept getting better.

I spooned it into our bowls, added a drizzle of flax oil, and voila! it was complete. Zia and I sat down to eat it, and we slurped it up.

We ate the entire saucepan of it while playing Zia’s counting game! It was light, flavorful, and yummy. And warming.

I think I might be making this soup every day for a while. At least, as long as the weather calls for hot broth and good noodles.

    Thank you Granny! I thought at first it was Caleb commenting…but that will be the day when he thinks soup with seaweed in it sounds good!
