first of the pies
That sweet little sugar pumpkin finally gave up the ghost! Here is our very first pie of the season.
It came out of the oven like a rocket entering the atmosphere–cracking and steaming. The altitude here causes those deep fissures, because the air is so thin and light. The pie rises fast and high, and halfway through baking looks like it will rise through the top of the oven.
But when the rising agents (like eggs) begin to finish their work, there is nothing to keep pushing it upwards–and it’s mostly full of hot air. The pie sinks back to a normal size, complete with stretch marks from being expanded to double. We are left with a pie that looks like the banks of the Rio Grande on a hot summer day.
It’s all good, because this will cover it anyway, and cracks just give more room to squish whipped cream into.

Cash and Zia each got their own little pie from the leftover batter.
Zia eats hers from the middle out…
and Cash doesn’t see any reason to use a fork…it just gets in the way. Dig right in, kids! Make your mama proud.
