chocolate chip cookies
I knew I would eventually have to make good my promise to Zia on yesterday’s snowshoe bribe. She woke up asking for chocolate chip cookies–but there was a small problem. The poor kid was doubled over with a bellyache, most likely from that tall cup of hot chocolate with whipped cream and who knows how many mini donuts. It lasted all day, and she slept most of the day away. I couldn’t really load that little belly down with more sugary stuff, but how could I say no?
I finally came up with a solution. Since we were almost out of butter, I found a recipe using applesauce and just a little butter. (I didn’t have applesauce, so I blended a couple of apples into a smooth sauce with my Vitamix.) Next, I nixed that cup of brown sugar, and used 1/2 cup raw brown palm sugar, along with 1/4 teaspoon stevia powder. I subbed whole wheat flour for the white flour, cut down the salt a bit, and voila. I had a cookie worthy of my baby.
But would she eat it? Or would it be a mealy hunk of whole grains without much flavor?
When she woke up, she smiled a big smile and took a big bite. And smiled again. She ate two of them, and two more today, and one more tonight after dinner. And she’s feeling much better.

Here’s my cookie recipe, souped up from the original:
Ingredients
- 1 1/4 cups whole-wheat flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup applesauce
- 1/2 cup raw sugar
- 1/4 teaspoon white stevia powder
- 1/4 cup butter, softened
- 1 tablespoon vanilla extract
- 1 large egg
- 1 cup semisweet chocolate chips
- butter to grease cookie sheet
Preparation
- Preheat oven to 375°.
- Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt in a small bowl; stir well with a whisk.
- Spoon applesauce into a fine sieve over a bowl; let stand 15 minutes. Discard liquid. Scrape drained applesauce into a large bowl. Add sugar, stevia, and butter; beat with a mixer at medium speed until light and fluffy (about 2 minutes). Beat in vanilla and egg. Add flour mixture; beat at low speed until well-blended. Fold in chips.
- Drop by level tablespoons 2 inches apart onto baking sheets greased with butter. Bake at 375° for 11 minutes or until almost set.

I am a bit suspicious, I must admit. These seem almost too healthy to be good. However, the fact that your little one gobbled them up makes me think they might be worth a try.
