homemade coconut milk

I’ve posted my recipe for coconut cream concentrate here before, but homemade coconut milk is more versatile and even easier to make.  In fact, this is such a simple recipe that it really isn’t a recipe–just kind of a method.

I use homemade coconut milk every day, in all kinds of things–smoothies, desserts, mashed potatoes–anything you would use regular milk for.  I like to drink it plain, too.  (I also make my shampoo with it.)  It’s just a little thicker than whole milk, but not as thick as coconut milk from a can.

Here’s how I make it:

1. Place 3 cups hot water and 1 heaping cup unsweetened shredded coconut in a blender.

2. Blend on high for a few minutes until frothy and creamy.

3. Strain through a sieve.  You can save the coconut meat to add to smoothies, oatmeal, etc.

Homemade coconut milk will keep in the fridge for a few days.  Just be sure to shake before using, since the cream rises.
